What are the advantages of coplanar waveguides with ground?
I see documentation on data sheets suggesting that the recommended transmission line is CPWG.

Is this the case for all embedded antennas? Why is this?

A major benefit of using a CPW as a transmission line is that each of its elements; the conductive strip, surrounding ground planes; isolating gaps; and dielectric substrate layer; can be modified in terms of their dimensions, and spacing between one another. This is useful for accurate impedance matching, as well as for the overall design of your PCB board.
